Millet has a slightly sweet, nutty flavor, but it is so mild that it tends to take on the flavor of the liquid it is cooked in. Millet doesn't contain gluten, and it is not an acid forming food, so it is soothing and easy to digest. In fact, it is considered to be one of the least allergenic and most digestible grains available. Actually, millet is not a true grain, but a grain-like seed. Millet is full of beneficial nutrients, including protein, fiber and B-complex vitamins. It is also especially high in iron, magnesium, phosphorous, and potassium.

Our family has been trying to eat more millet since it helps to alkalize the body, and one way we all really like is to grind some millet 'meal' and use it in place of part of the corn meal in corn bread. The bread tastes fantastic, and you'd never even suspect the millet.
