Quinoa (pronounced KEEN wa) is one of our family's favorite 'grains.' Actually, it isn't a grain at all since it is not a member of the grass family. Quinoa is actually a seed, related to leafy greens like beets, spinach, and Swiss chard. It's rich in manganese, copper, and magnesium, and it's a complete protein.
The Perfect 'Grain' for Candida Sufferers
According to Donna Gates of Body Ecology, quinoa does not feed fungal infections in the body, like candida. Instead, quinoa acts as a pre-biotic that feeds the good bacteria in your intestines.
To Prepare
Soak quinoa for at least 12 hours prior to cooking to improve digestibility. Use 3 1/2 cups water or chicken stock for 2 cups dry quinoa. Bring to a boil and immediately turn off the heat and allow to slowly cook from the stored heat. Ready in about 25 minutes
