 Similar to the better-known Beauregard variety, these Carolina Ruby sweet potatoes are sure to please your family. Tubers have a bright, ruby-red skin with a deliciously rich-flavored orange flesh. Their sweetness and deep orange color are both indicative of high vitamin and mineral content. Bake them, peel and roast them, make sweet potato fries, or use them in place of pumpkin or squash in many pies, casseroles, breads, muffins, and other baked goodies.

These sweet potatoes may come unwashed to help keep them fresher.
